From Seed to Cup, Cafe de Chiapas

From Seed to Cup, Cafe de Chiapas

From Seed to Cup This cup is more than coffee. It represents five years of growth—from seed to tree, cherry to bean, roasting to grinding, and finally, preparation. It represents five years of dedication from Mexican farming families who cultivate, harvest, and depend on this seed for their livelihood. What may be a few moments of enjoyment for you is the result of years of patience, hard work, and pride for someone else. From seed to cup, Mexican coffee tells a story of tradition, craftsmanship, and culture.

A Space Built with Intention

From handcrafted light fixtures and traditional Talavera tile to artisan treasures lovingly created in Mexico by artisans, every detail is a tribute to the craftsmanship, culture, and enduring spirit of Mexico.

Our Historia, Our Heart

We opened in Downtown Santa Ana in 2014 with one belief: a café could carry a cultura. That belief has grown into three locations, a Panderia, A roasting room coming soon — and counting.

Inspired by the vibrant cafés and fast-casual culture of Mexico City, our brunch and lunch menu blends traditional Mexican flavors with a modern approach. From house specialties to everyday favorites, each dish is crafted to honor our roots while bringing a fresh perspective to the table.

What our guests are saying

The food is fantastically delicious. The chilaquiles, the pancakes, French toast, and burritos are very savory and delicious. The hot and cold brew cafe de olla is a must.

Considering the factors in rating a restaurant - quality of food, friendly staff, ambiance and decor, cleanliness - this place fires on all cylinders. Great choices for breakfast and lunch (though I'd like to see what they could do with carnitas or birria). Indoor and outdoor seating (with a covered patio with heaters and ceiling fans 👍).
